Time for one of my favourite combinations… yes, protein wrapped in protein! This chicken stays SO MOIST with the addition of the fat from the bacon and pretty much any side dish will work with it. I love how pretty the presentation is when doing a roulade. It looks a lot more challenging than it really is, trust me!
Not only is a roulade great because you can wrap it in bacon and or prosciutto but you can also STUFF it with whatever you want. More bacon, perhaps? Go for it, I wont tell! For this one I used cheese and herbs as the stuffing but please don’t freak out about the cheese. I don’t consume it often and when I do, I savour every cheesy bite!
