I believe this was the first intentionally Paleo recipe that I ever cooked. I stumbled upon the recipe on another website and decided to tweak it to my liking (what I do for most of my recipes on here). These muffins are great and so versatile! You can basically add any ingredient that you feel like, which is great for those days when you want to do a leftover clean-up. The base is eggs and from there you can go crazy! Add any protein that your little heart desires; steak, ham, chicken or even go vegetarian! Not only suitable for breakfast, I find these work great Saran-wrapped and brought to work for lunch or a quick snack.
