Roast Beef (eye of round)

Who doesn’t think roast beef is delicious? Forget it, if you are one of those people, I don’t want to know you! Such a homey, comforting dish. Especially when paired with my favourite sweet potato fries! Oh and the Paleo-friendly condiment; horseradish! Mmmmm!

Of course, such deliciousness comes with a price. This recipe requires you to (gasp) think ahead! Or does it…? Most roasts can take up to 5 hours or more to cook, depending on this size. This high-temperature method I use takes less time, requires a less expensive cut of beef AND taste wonderful and moist. What crazy individual wouldn’t want to try it?
