One of vegetable hater’s favourite mains is a chicken roulade. There are so many different variations that can be made so it is something that you can often create with whatever you have left in your fridge. On this occasion, I didn’t have any other cheese besides boccaccini and I was unsure as to how it would melt. As you can see, it worked our great! Stuffed alongside bacon and onions and “breaded” with a spiced almond-flour coating, pairing it with a cucumber and tomato salad made for a perfect dinner.
