“Cream” of Tomato soup


This soup has proven to be one of my favourites for batch cooking and portioning for work lunches. It is relatively simple and fast to make and it tastes great! The substitution for cream is a few tablespoons of coconut milk which adds a nice sweetness and a rich depth to the soup. You can switch it up with different spices and play with heat to make it as spicy as you can handle!
