Cajun-spiced Almond Flour and Coconut Crusted Chicken Fingers


You know when you are watching a movie, late at night and you have a craving for something crunchy and savoury? Well, this was one of those times! Instead of grabbing chips or popcorn, pull up your Paleo pants and get creative! I have some thawed chicken breasts in the fridge and I though, hmm, why not bake some chicken fingers?  The best part is making them nice and spicy and also adding a flavourful dipping sauce. The method is quite simple and you can really get creative. I made mine sweet and spicy with the edition of cajun spice and coconut flakes. This recipe would also work if you would like to make popcorn chicken. Hmmm, maybe I will try that next time.
