One of my contributions towards my Birthday potluck, these bites were pretty easy to make (a little time consuming though) and a big hit. As if my day wasn’t already hectic enough, preparing to host this potluck, I had to go to THREE grocery stores to get fresh basil, is there some kind of basil shortage going on? Once I was finally home, I started with my meatballs and stuffed mushroom caps. Then, once they were in the oven, I started assembling these little beauties. Fresh mozzarella, basil, tomatoes and some balsamic glaze were all it took. Oh and some toothpicks because everything looks better on a stick!
