Devilled Eggs with Pancetta


Here is a closeup of my contribution to the Christmas Potluck that we had at work. Devilled eggs are my goto for potlucks because they are pretty easy to make and EVERYONE loves them (including me). Today, I decided to add a little something something to them so I cubed and fried some pancetta to add to the filling but only half, since I have some coworkers who cannot eat pork products. Cant leave them out of tasting my delicious creation. To put my own personal spin on these eggs, I add smoked paprika on top instead of regular paprika. It adds an unsuspected deeper, smokey flavour on top and it is always a hit!
