Pepperoni Chips


I am still at home sick and although that smoothie was delicious, I still find myself hungry. This time, I am craving something with more texture, something crunchy like chips. There are many items that we can turn into chips; proscuitto,  kale, even mushrooms! But looking in the refrigerator, my eyes fall on the pepperoni, its even bite size! I quickly learn that these do not take long to crisp up as I am forced to throw away a completely scorched batch. I keep my eye on the oven the next time and they came out beautifully. Dipping them into a spicy mustard proved to be a winning combination. Perfect for a snack or maybe even a potluck dish, it certainly is simple.
