This winter is dragging on far too long! I want to spice things up and make a meal that brings me back to the warm summer days, or better yet, one that makes me relive my #1 vacation destination: Mexico! Mexican food is definitely my favourite type of food but it’s something that is hard to eat on a Paleo diet because most of it consists of rice, tortillas or beans, or what I like to call, the evil trifecta!
There are options though, when one has a hankering for Mexican. In previous posts, I have spotlighted tacos or fajitas on a romaine heart and while that works fine, sometimes I just prefer a giant pile of food. So behold, my Taco Salad! You can go as crazy as you want with this but you definitely need to add the homemade guacamole to round out this delicious salad.
