Paleo Banana Walnut Cookies

It’s Sunday, so for me that means looking through my pantry and fridge and utilizing items that are about to go bad. Almost every weekend I have the requisite left over bananas and most oftentimes I make banana bread. Today, I felt like doing something a little bit different, something more like a cookie. After looking through recipes for some inspiration, I decided to make some banana nut cookies with almond butter as the base and they turned out fantastic! They were more on the softer side for texture instead of being crunchy but tell me who doesn’t enjoy a nice warm and moist cookie? The amazing thing with this recipe is that there is no flour, not even almond flour! Also, I could assemble all of the ingredients using my small food processor (always a bonus to use less dishes!)

You may need to buy some things that aren’t normally on your shopping list, like dates. But for a Paleo Princess who has a sweet tooth, dates are something that I always have in my pantry. They have a long shelf life too, so if you don’t use the whole package right away, they will store until the next time you have a craving for something sweet!😁
