Pistachio Crusted Rack of Lamb with a Yogurt Mint Dipping Sauce

Boy, was I hungry today! I am one of those people who can’t really function (politely) when I am in need of food. Like today, after work I had to get pistachios from the store and the cashier said “did you just get off work? You look like you’re ready to go home!” Guess I have an angry looking hunger face Hahha! So when I finally did get home there was a bit of preparation to do before I ate but it wasn’t that bad. However it is almost nine and I have just finished eating so that isn’t the best either but I digress. The meal was worth some delayed gratification. The crust on the lamb added a great texture and flavor and when I dipped it into the yogurt sauce it really amped up the seasoning of the meat. A key step in the recipe is ensuring that you sear the meat before roasting it. I know sometimes I have prepared it without the sear but it doesn’t pack the same savory punch.

I paired this lamb with some stuffed mushrooms and tomatoes that were rather simple so I didn’t bother with a recipe. I hollowed out the center and added a mix of Parmesan, almond flour, thyme, onions and garlic. I then roasted at 400 for about 20-25 minutes. A great accompaniment!
