Pork Belly with Onion Purée, Fava Beans and Chanterelles

Surprisingly enough, my first time trying pork belly was in St Lucia a month ago and ever since that first taste, I have been in love! So when I saw it on the menu at Garde Manger, I knew that I had to have it again. I knew that it would be fantastic since it was being prepared by one of the greatest Chefs; Chuck Hughes. His ingredients are always seasonal and incredibly fresh and this dish was no exception! Even after devouring my starter (spicy jerk crab) I still managed to clean the plate and just barely restrained myself from licking the plate afterwards.

The pork belly was nicely crisped up and yet so tender and succulent. The accompaniments of onion purée, fava beans and chanterelles complimented each other wonderfully and I think that the one bite where I managed to fit each component on the fork was the most delicious mouthful I have ever had in my life! Soon I am going to venture out of my comfort zone and try to prepare pork belly myself. I can only pray that it will turn out half as good as this dish was!
