I love the versatility of butter lettuce and how it allows me to eat ingredients that would usually belong in a sandwich. This chicken salad filling was so flavorful and exactly what I was craving for a nice and light dinner tonight. I thought that the addition of warm goat cheese and toasted walnuts would complement the seasoned chicken with some tasty fall flavors. I then added the fresh strawberries to add a little acidity and sweetest for a more complex bite. It kind of symbolizes the changes of the seasons that is occurring at the moment with the mixing of fall and summer ingredients. For a sauce, I very lightly tossed the chicken with mayonnaise and once assembled on the lettuce cup, I drizzled some balsamic glaze for an added kick. Only two of these and I was almost full, I still had a little room left for a bittersweet square of extra dark chocolate for dessert. Yum, what a great way to end a Sunday!
