Continuing with the seafood trend of this dinner (started with an ahi tuna tartare) I chose salmon for my main. I have always been a salmon fan and I love to see dishes that add a little bit of creativity, especially in the form of a non-carb crust. Also the addition of my all-time favourite vegetable the Brussel sprout, married with my all-time favourite bacon, this dish was a no brainer. It’s not often that I get to enjoy Brussel sprouts since Vegetable Hater detests both the smell and taste (I know, crazy right?) so tonight’s meal was a treat!
