Crispy Zucchini Fritters with Spicy Mayo

Thanks to my Mom and Dad, I had some fresh zucchinis from the garden, I just had to figure out what to do with them! You already know that whatever I chose to make, Vegetable Hater wasn’t going to have any part of it so I focused solely on what I felt like eating. Lately I had been thinking about tempura, especially vegetable tempura from one of my favourite Japanese restaurants. However, I knew that something fried and crispy was definite not going to fit into the Paleo lifestyle. Or could it…?

I decided to freestyle a recipe utilizing my favourite flour replacement: almond meal! Not surprisingly, it worked out perfectly! I know it isn’t the most Paleo practice to fry but it conformed in every other way so I didn’t feel too bad about it. I made a quick spicy mayo to dip the fritters in but it tasted just as good plunged into my tomato soup. Can you believe that I enjoyed this delicious and savoury meal with the absence of a single protein? I cannot remember the last time that happened, so you know it must have been good! So good in fact, that Vegetable Hater couldn’t resist trying it and you know what? He actually liked it! Score one for Paleo 😁
