Black Angus Filet of Beef with Cabernet Demi-glacé and Caramelized Shallot Blue-cheese Butter

The first time I try a new restaurant, I always gravitate towards my favourite dish; a big, fat and juicy filet in order to gauge the quality of the restaurant. Let me tell you, I was not disappointed by this one! With the delectably rich sauce and the salty butter topping it was everything that I like about eating a steak. The beef was so tender that I could slice it with the side of my fork but this place was pretty fancy so I kept with my regular dining etiquette. The sides of Brussel sprouts, fried scallions and squash perfectly complemented the main with rustic, seasonal flavours. With a meal like this, I know this is the first of many times that I will frequent this establishment!
