Stuffing chicken or slathering it with some kind of sauce is pretty much the only way that you can get me to eat a chicken breast. I find it needs a lot of flavour added in order to be palatable, which isn’t necessarily a bad thing, it just means that one needs to get creative once and a while! The good thing about a chicken breast is its such a neutral food that you can stuff it with almost anything and it will be tasty. Today I decided to have kale and feta stuffed inside with an avocado oil and basil marinade. Very simple to prepare and pretty fantastic to eat! I paired it with a simple strawberry salad dressed with my go-to homemade balsamic which is sweetened with agave syrup and texturized with toasted almonds. Yum!
