Tonight I had a craving for something a little sweet and since I had taken chicken breast out, I had to think what type of marinade or sauce would help to satisfy this. Looking in the pantry, I spied my jar of almond butter and the idea hit me! How about a balanced mix of sweet and heat with some spicy peanut Thai chicken breasts? Ok, so the title is deceiving, it isn’t really peanut butter but honestly that’s exactly what it tastes like! Except we are using the Paleo-friendly alternative of almond butter, yay guilt-free dinner! 🙂 For a side dish, I decided to pair the chicken with a fresh and light salad which worked out quite well as the chicken and sauce were somewhat heavy. The recipe does call for some marinating time so do that first step and fit a workout in. Once you’re done, the chicken will be nice and tender and ready for the Bbq! Enjoy!
