Oh the poor Vegetable Hater, he has been craving mashed potatoes but he knows that that is a dish I will not make! It time to paleoize mashed potatoes! There are numerous recipes online that use a few different methods to achieve this goal but the most prevailing was cauliflower, so I thought I would give it a try. The directions are quite simple so basically you are adding whatever flavours that you prefer to make this recipe your own. I am a garlic lover so I decided I would incorporate at least a few cloves in my mash and I also didn’t want to add any cream or milk with the fear that it may become an unattractive texture.
What I ended up with was pretty decent, although I definitely did not have the Vegetable Hater fooled. After tasting the mash, he said it was “interesting” which usually isn’t the best discriptor (LOL) but he did eat all of it so that says something. I am a lover of all vegetables and thought it was quite delicious and a good consistency which was very similar to that of a mashed potato. My recipe only consists of steaming and blending so it is pretty uninvolved and it makes a lot if you use a whole head of cauliflower, yay leftovers! I paired mine with Bbq chicken and a garden salad but the mash is so versatile and can take on a variety of flavours so it will work with pretty much any main. Enjoy!
