Cajun Chicken Roulades

Anytime that I want to spice up some regular chicken breasts, I always look to the roulade. There are endless options for stuffing and “breading” that will fit with the Paleo lifestyle, usually I just look into the fridge for inspiration. Not unlike any other day, today I was in the mood for bacon. I decided to do a nice sautee of bacon, onions, peppers and mushrooms for the stuffing. I spread some cream cheese and Parmesan into the chicken breast to add some moistness and a nice creamy consistency on the inside. Then for the “breading”, I went to my old standby of Cajun spice and almond flour combined. The result was delicious and looks beautiful too! I paired it with a simple garden salad as these chicken breasts become quite filling with all the filling! 😂😂😂
