Pumpkin Spice Doughnuts with a Dark Chocolate Glaze 

For someone like me, the most challenging part of maintaining a Paleo lifestyle is the inability to have sugar in my diet. I have such a sweet tooth that pretty much every night after dinner I’m craving something sugary and sweet. Tonight was an especially strong case and I just couldn’t get it out of my mind. Looking in the pantry, I saw a can of pumpkin purée from last fall and I thought what can I do with this before it expires? Searching pictures of desserts online for some inspiration, I came across some scintillating photos of sweet, carby donuts. I’ve never really been a fan of donuts, or baked goods for that matter, however for some reason that photo just peaked my interest. I thought to myself, there has to be a way to make these donuts Paleo especially since I have almond flour, coconut flour and tapioca flour in my cupboard! I soon came across a standard recipe for Paleo donuts and decided to tweak it a little bit to adjust with what I had in my cupboard for ingredients and also to my taste. I also felt like the cake wouldn’t be enough and I need some type of glaze or topping in order to really fulfill this craving.
Although dark chocolate is not technically Paleo, it is one of the lesser evils that I could add in order to satisfy this sweet tooth and some doctors even say the dark chocolate in moderation is good for you! 🙂 Never one to ignore Dr.’s orders, I decided on a simple dark chocolate glaze with coconut oil and honey. I also added some shredded unsweetened coconut on half of the donuts for a little more variety and because I thought it would look pretty. These donuts turned out delicious and were just what I was looking for. Surprisingly, they didn’t even take that long to prepare and Vegetable Hater was a big fan!
