Roasted Beet and Kale Salad with Goat Cheese and Candied Walnuts

Is it just me, or does anyone else have that one dish that you always buy at restaurants but yet never make it yourself? For me, that would be the elusive beet and goat cheese salad. It is one of my favorite starters or side dishes to order any time I am in a restaurant which offers it. Although for some strange reason, I have never attempted to make it myself. I think one of the main reasons is that I never have beets at home, well that is about to change!
Today for the first time, I roasted some beets and they turned out fantastic. The recipe is extremely easy to make, I pretty much winged it the whole time but I made sure to add candied walnuts, my homemade balsamic and of course some crumbles of creamy goat cheese. The worst part of this salad is the fact that it takes an hour to roast the beets (I’m so impatient when I’m hungry!) But as long as you have some preparation, you’ll do just fine. I even made the beats about an hour before I was preparing dinner and it worked out quite well. So lesson learned, never again will I rely solely on restaurants to provide me with the dish that I receive so much enjoyment from. I hope you do the same and challenge yourself, it’s worth it!
