Roasted Squash and Garlic Soup

Well, it’s another gloomy summer day, the second one in a week, what’s going on with this weather?? The only silver lining is that it gives me an excuse to make another delicious soul-warming soup. I have been trying to figure out what to do with this butternut squash for two weeks now and I finally know the answer: it will go perfect in a rainy day soup! I decided to roast the squash because I find that imparts the most flavour. I don’t like only roasting one vegetable since it’s such a long process and I like to take full advantage. So I decided to add a couple whole garlics to amp up the flavour a bit. My house smells amazing!!! If you are having a dinner party, I highly reccomend roasting garlic, your guests will be super impressed with the aroma!

After the long process of roasting, the soup is finished quite quickly. I sautee some onions and carrots, add the spices and then the liquid. I allow it to simmer for a small amount of time (I’m so hungry!) and then blend it all together. It is ready for tasting right away and the flavours are so rich and warm, perfect for any day but especially fitting on a dark and gloomy day like today. Try this out, you won’t be disappointed!
