Roasted Corn and Red Pepper Salad

Tonight, as I was grilling some corn on the cob, for the zillionth time this summer, I decided I wanted to try something different for a change. I knew Vegetable Hater would love his standard corn on the cob but I was yearning for something with a little more varied flavour and panache. I decided on cutting the corn off the cob and making a fresh, crunchy and seasonal corn salad! Wow, what a great idea!
I thought of flavours that would complement the grilled corn and right away, a roasted red pepper came to mind, so I tossed that on the BBQ too! I diced up some cucumber, green onions, heirloom tomatoes and then crumbed some feta cheese into the mix. When I tried all of these delicious ingredients in conjunction, it was like a party in my mouth! Thea best part? There was zero need for a dressing! I will definitely be making this salad again this summer, it’s perfect!
