Oh how I love a nice salad at lunch time. There’s nothing worse than packing in a huge lunch and then feeling like a lethargic hog all afternoon. Today I made a salad with no meat protein, can you believe it? And I was actually satisfied at the end, it’s a miracle!
The best part about salads are that they take a relatively short period to prepare and as soon as you are finished, you can get to munching, no wait time! All I did for this salad was combine the spinach, goat cheese, mushrooms, red onions, heimloom tomatoes and capers and then drizzled with my homemade 3 ingredient dressing. A beautifully bright and fresh salad which pops on the palette, what more could a Paleo Princess ask for?
