BLT Fritatta

One of the toughest aspects of being Paleo is the preparation that is required. When it’s been a hectic day, you don’t always remember to take a protein out of the freezer to defrost. Such was the case today. I came home around 4:00 and we were hungry! There was nothing in the slow-cooker and no protein taken out, the horror! Immediately I thought of our usual fail-safe; eggs! However I wasn’t feeling the normal eggs and bacon “breakfast for dinner” thing. I wanted something more sophisticated, more put together. So I decided to make a frittata filled with some of my favourite ingredients: bacon, mushrooms, onions and spinach.

The finished product was delicious and healthy slices of heaven. Ready in about 40 minutes we devoured the entire dish (yes that’s 9 eggs!) and felt perfectly satiated. A wonderful addition would have been some goat cheese peppered throughout but the Vegetable Hater wasn’t having this. I was lucky enough that he ate the spinach!
