Coconut Milk Breakfast Quinoa with Brûléed Mango 

Breakfast can be a tough time of day for a Paleo Princess. I would estimate that around 90% of breakfasts involve some type of unhealthy carb, whether it be potatoes, toast or pancakes. Sure, eggs are an excellent source of protein and there are numerous ways that they can be prepared but sometimes you just crave something different.
Or something sweet, as was the case this morning. Out are all of the sweet breakfast options that you can imagine like doughnuts, pastries or even flavoured oatmeal. However, there are alternatives if you consider a seed which is somewhat similar to an oatmeal: quinoa! Wait, isn’t quinoa strictly a savoury dish? Not it you prepare it with a few special ingredients; such as dates, coconut milk, vanilla and sweet mangoes. YUM! This dish did everything to satisfy my craving for sweets and was incredibly filling so I may not eat until dinner time! Hey, there’s nothing wrong with a little fasting! 😁
