For Super Bowl Sunday, I decided to make a treat for the Vegetable Hater and he was really craving nachos so I happily obliged. I decided to make them as healthy as possible and to use shredded chicken in lieu of red meat. It took a little bit of planning since I had to slow cook for approximately four hours but it was definitely worth it. Especially since I ended up with some, delicious leftover pulled chicken that I could use many other dishes such as soups, or in this instance, delicious chicken taco lettuce wraps!
Since most time and effort goes into prepping then slow-cooking the chicken, once that is complete, the rest of the process is super simple! Basically, you just need to shred the chicken and dress your lettuce wraps any way that you wish 😬👍🏻 I cooked my chicken in salsa with a couple squirts of liquid smoke. So once I shredded it, it was nice and moist and flavourful. I topped it with additional salsa for that fresh bite and sliced avocado, shredded cheese, green onion and sour cream. Yummy and much better for you than nachos!
