My last post was a little foreshadowing for my delectable dinner tonight. When I picture creamy coleslaw, I always think of Bbq. Whether it be giant ribs, Bbq chicken or in tonight’s case: sumptuous pulled pork. There’s just something about the pairing of tangy and creamy coleslaw with some deep, flavourful, slow-cooked pulled pork that screams perfection. It’s a match made in heaven!
What isn’t heavenly though, is the usual accompaniment of a big bun. Us Paleo Princesses don’t need that. What we do need though, is some type of vessel to get this delicious pork and slaw into our bellies! Well, after only using about one quarter of the cabbage for the slaw, an idea came to me: what about rolling the ingredients up using a cabbage leaf? Kind of like a modified cabbage roll.
It worked and it was amazing! I think I found a replacement for my lettuce wrap… cabbage feels a little more durable and flavourful. I see many cabbage rolled meals in my future… 🙂
