You know me as being a meat lover but really vegetables and mushrooms are some of my favourite things. I could never be a vegetarian but I can definitely consume a vegetable-rich diet with no complaints. Today I was craving the meatiness of some fresh and delicious mushrooms. I decided that I wanted them nice and warm with a balsamic glaze complimented with some creamy goat cheese and fresh herbs.
This is such a simple recipe with so few ingredients, it’s perfect for a light lunch, an appetizer or even just a snack. Feel free to get creative with herbs and flavourings. I added some freshly chopped parsley and some sautéed garlic for a nice rustic feel. I debated adding onions but I felt that simplicity was key in this dish and the onions have the potential of overpowering other ingredients.
