Immunity Soup

This morning, I awoke with a slight scratch in my throat. This was horrifying to me, as I try to do everything to remain healthy and moments that I do get sick are few and far between. I practically ran downstairs to devour numerous tablets of vitamin C and I started to meal plan.

I decided to run to my favourite health food store to grab one of their delicious fresh juices packed with ginger, orange and many other fruits and veggies. This served as my inspiration for dinner; I would make a savoury soup packed with ingredients that are not only flavourful, but also immunity-boosting.

What a better way to make this super soup than to first roast the carrots, squash and garlic? It just doesn’t get much better than the sweet and savoury aroma and taste that comes from roasted garlic.
