Beet and Goat Cheese Salad with a Maple Bacon Balsamic Viniagrette

Yes, a maple bacon vinaigrette. Can you believe it? I don’t think I will ever eat another type of dressing. I was inspired while grocery shopping and I spied some bacon flavoured maple syrup. At the time, I had no idea how I would use it but I just knew I had to have it!

Then tonight and I was pondering what to make myself for dinner, I thought that, since Vegetable Hater is not home, why not make a delicious salad filled with ingredients that he would not appreciate. Cue the beets and the goat cheese 😁👍🏻 Then I thought why not add some crumbled bacon? Because well, why the hell not? That’s when it hit me, I could tie in that bacony goodness by using the bacon flavoured maple syrup inside a balsamic vinaigrette. Pure heaven.

All of the different flavours complimented each other beautifully. The slight tartness of the pickled beets with the creaminess of the goatcheese all smothered in liquid bacon. How much better can you get?
