Arugula and Spinach Salad with Candied Walnut Clusters and a Maple-bacon Dijon Vinaigrette

If I were to share the one negative aspect of maintaining a Paleo diet, it would definitely be the amount of preparation and forethought that is required. Obviously, this is a sign that you are using fresh and quality ingredients but that doesn’t help matters when it’s 2pm and you haven’t eaten ANYTHING yet.

That is was what happened to me today. The baby wanted to play and play and play. By the time she went down for a nap, it was noon and I was faced with the choice of making myself lunch or fitting a workout in. Like most times, I chose the workout and by the time I wasdone and showered, it was 2:00 and I was hungry for something fast! Now for me, salad has became the “fast food” of my kitchen. Usually, it doesn’t take much to throw some vegetables together and stir up a vinaigrette. When you’re hungry though, even this seems like too much effort!

Yet I powered through it and even took the time to create some deliciously sweet candied walnut clusters. Mm-mmm! That just may count as my dessert!
