Quinoa and Arugula Salad 

Well if my husband is the Vegetable Hater, then I am the Salad Lover! Probably my favourite thing to eat and it actually requires the least amount of effort! Of course, some prep is needed, but once you have that done, it’s so easy to create so many different salad combinations! 
Today, I had some leftover quinoa so I decided to combine that with some arugula and veggies to create a bright, light and filling lunch. I added some diced red onion (my favourite for salads), cucumber, cherry tomatoes and a sprinkling of feta. The dressing was a simple mix of avocado oil, balsamic, lots of fresh squeezed lemon juice and agave. Top with salt and pepper and you’re good to go!
