I find that one of the most underrated meats is the humble chicken thigh. I happen to find the flavour rich and delicious and it also pairs well with so many different vegetable combinations. Today, I decided to marinate the chicken in an Italian style marinade and spice and to add some mushrooms and onions to the skillet while it was roasting.
I just LOVE using my cast iron skillet. I find that it is perfect for all cuts of meat in order to achieve that nice, deep sear and then all you have to do it pop it in the oven to complete the cooking. Wonderful!
