Parmesan Roasted Squash

I sometimes find it hard to get different vegetables in my diet at dinner time. Mostly because of the Vegeatble Hater, the only things he likes as sides are salad and corn. Well tonight I decided to shake things up and roast some delicious butternut squash with Parmesan cheese in order to make a perfectly crispy exterior that I knew he would like. Plan worked! He actually ate his whole plate! The best part? The baby loved it too! It is always a success when all members of the family can enjoy the same meal.

Cooking time wasn’t too bad with this side dish. Only 30 minutes, which is actually a good amount of time to prepare your main while it’s roasting. I think next time I may add some roasted garlic and onions, mmmmm.
