Roasted vegetables to me, are like candy! I just love the totally different flavours and textures that come with a hot oven, some spices, oil and vegetables. While I have that oven roaring hot, why not add a fresh piece of fish to the mix? Topped with sliced and spiced lemons, this meal was a total hit! Obviously, a substitute was in order for the Vegetable Hater. He got some roasted potatoes instead, which didn’t add any extra time or much effort to what I was already making, so he’s lucky. 😝
Tilapia is such a mild fish that it really takes on any flavour that you cook it with. I decided to keep it pretty simple with a drizzle of olive oil, some salt, pepper, thyme, paprika and sliced lemon. Mmmm! Such a light yet satisfying meal, which definitely won’t leave you feeling like you need a workout! Aren’t those the best kinds of meals?
