Coconut Milk Breakfast Quinoa with Bruleed Mango

Ingredients

Quinoa

Coconut milk

Chopped dates

Vanilla extract

Water

Pumpkin pie spice

Mango

Maple syrup

Directions

Combine quinoa, milk, water, vanilla and spice in a saucepan and cook on low for about 15-20 minutes. Allow to sit with lid on pot for about ten minutes.

Add maple syrup into a separate small pan.

Once warm, add sliced mango and cook until nicely browned on both sides.

Pour the quinoa into a bowl and add mango on top.

Pour in some extra coconut milk if desired.
