- Chicken breasts
- Cajun spice
- Almond flour
- Shredded coconut
- Preheat oven to Preheat to 375
- Fill one mixing bowl with the flour, coconut and Cajun spice and another with the whisked eggs
- Slice chicken into strips and dredge in the eggs then flour mix
- Bake chicken for 20-30 minutes until golden brown and cooked through.
