Lemon Roasted Tilapia with Roasted Veggies

Ingredients:

Tilapia

Avocado oil

Fresh sliced lemon

Thyme

Salt & pepper

Paprika

Butternut squash

Yellow pepper

Red onion

Brussel sprouts

Directions:

Preheat oven to 400

On a foil-lined baking sheet, add the diced vegetables and toss with oil, salt, pepper & thyme.

Cook for 20 minutes, tossing once at the ten minute mark.

Add the tilapia to the baking sheet and drizzle with oil, salt, pepper, thyme, paprika and sliced lemon.

Roast for an additional 15-20 minutes and enjoy!
