Bacon and Blistered Tomato Arugula Salad with a Warm Bacon Balsamic

Ingredients:

Arugula

Cherry tomatoes

Scallions

Boiled Egg

Bacon

Avocado oil

Minced garlic

Balsamic vinegar

Fresh lemon juice

Salt & pepper

Oregano

Agave syrup

Directions:

Boil the egg.

Cook the bacon and scoop out with a slotted spoon.

Cook cherry tomatoes in bacon fat until blistered, set aside.

Combine the oil, vinegar, garlic, lemon juice, spices and agave.

Add about a tablespoon of the bacon fat into dressing and whisk.

Place arugula, tomatoes, bacon, onions and egg into bowl.

Pour dressing overtop and enjoy!
