Egg Salad wrapped in Herbed Almond Flour Tortillas

Ingredients

  • Eggs
  • Mayonnaise
  • Celery
  • Green onions
  • Salt and pepper
  • Dill
  • Smoked paprika
  • Almond flour
  • Olive oil

Directions

  • Preheat oven to 350
  • Boil eggs
  • To prepare the tortillas, mix the flour, one egg, oil and salt. Knead like regular dough and place between two pieces of parchment paper and roll out. Take off top layer of paper and press any desired herbs or spices into it. Place in oven for approximately 6 minutes. You can change the timing depending on how pliable you want the tortilla to be.
  • Peel boiled eggs and chop with celery and onions. Combine with mayonnaise, salt, pepper, smoked paprika and dill
  • Add filling to tortilla and roll
